CARBOHYDRATES

Carbohydrates provide much of the energy needed for physical activity and organ
function.  They vary from simple sugars, complex carbohydrates and fiber.
Simple sugars generally provide a quick source of energy that is not long lasting.

Complex carbohydrates, also known as starches, provide a longer lasting form of energy

FIber is categorized as soluble and insoluble.  All fiber rich foods contain a mixture of both
types of fiber
